Ingredients
- Rice paper
- Vermicelli noodles
- Herbs (mint, cilantro)
- Cooked and peeled shrimp or chicken
- Julienned vegetables (cucumber, carrots, etc)
- Dipping sauce (fish sauce, peanut sauce)
Instructions
- Prepare all the ingredients by cooking the rice vermicelli noodles and any protein you'd like to include (shrimp or chicken). Also, wash and chop the fresh herbs, lettuce or cabbage, cucumber, and carrots.
- Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens but still holds its shape.
- Lay the softened rice paper on a clean, damp kitchen towel or a smooth surface.
- Place a small amount of cooked rice vermicelli noodles in the center of the rice paper.
- Add a few pieces of cooked shrimp or shredded chicken (if using) on top of the noodles.
- Layer on a few fresh herb leaves, shredded lettuce or cabbage, and some julienned cucumber and carrots.
- Carefully fold the sides of the rice paper over the filling. Then, roll the rice paper from the bottom up, tucking in the sides as you go, to form a tight roll.
- Repeat the process with the remaining ingredients to make more summer rolls.
- Serve the summer rolls with rice vinegar or lime juice for dipping, if desired.
